Recently I made a personal commitment to buy less Recently I made a personal commitment to buy less so I would use everything in my pantry and freezer. Whenever I travel, I buy spices and all sorts of shelf stable products. You just never know … . I found a package of frozen salmon in the freezer, long over-brined Kalamata olives, and an impulse buy from an Asian grocery, dried vegetables in the pantry. A curious mix of julienned papaya, carrot, white carrot, cucumber, and chilis. My cousin Evelyne, an excellent cook, taught me a trick to revived fish frozen a bit too long. I defrosted about 2 pds of salmon, mixed 3 cups cold water with 2 tbsps white vinegar and 1 tsp kosher salt, cover the fish and refrigerate for 20-30 minutes. Drain, rinse, and pat dry. Use however you planned. I stewed the fish with onion, garlic, tomatoes, tomato paste, white wine, Kalamata olives, capers, bay leaf, handful of dried vegetables and zucchini. Chefs hate waste. We’re always looking for ways Chefs hate waste. We’re always looking for ways to use ingredients not matter their age. Last choice is to throw it away. But, I had two croissants left bought from @poilane in Paris in March then immediately frozen. I made a savory bake with two eggs, a bit of milk, sautéed mushrooms, wrinkled tomatoes, scallions, thyme, and sharp cheddar cheese. I would have preferred aged Gruyèye cheese but I didn’t have any and I’m concentrating on the ethos of  using what I have. The house hot smoked salmon @rutherfordgrill has not disappointed in decades. Perfect balance of smoke aroma and flavor with toast points and tarragon sauce. I remember when they opened. It became an after-school highlight for my 8 year old son. Owner Will Goia has top level culinary pedigree from Chez Panisse & Oliverto. I hadn’t seen zucchini flowers on a pizza outside of Italy until Will opened his shop. The tree is in production overdrive so she gave me six ripe avocados. Using up salsa, red onion, lime, and cilantro I made a large bowl of non-traditional guacamole.
