Excellent seafood lunch in Manzamitla. Met lovely staff some who returned from years living in the US. Octopus is my favorite seafood but the prawns and whole fried fish were excellent. Recently I made a personal commitment to buy less Recently I made a personal commitment to buy less so I would use everything in my pantry and freezer. Whenever I travel, I buy spices and all sorts of shelf stable products. You just never know … . I found a package of frozen salmon in the freezer, long over-brined Kalamata olives, and an impulse buy from an Asian grocery, dried vegetables in the pantry. A curious mix of julienned papaya, carrot, white carrot, cucumber, and chilis. My cousin Evelyne, an excellent cook, taught me a trick to revived fish frozen a bit too long. I defrosted about 2 pds of salmon, mixed 3 cups cold water with 2 tbsps white vinegar and 1 tsp kosher salt, cover the fish and refrigerate for 20-30 minutes. Drain, rinse, and pat dry. Use however you planned. I stewed the fish with onion, garlic, tomatoes, tomato paste, white wine, Kalamata olives, capers, bay leaf, handful of dried vegetables and zucchini. Finished with lemon juice, parsley, and EVO. #usewhatyouhave #lowfoodwaste #salmondinner #stewedfish #moneysavingdinner #makeitathome #buonacena
